Pruning in the snow at Pezoulia

We prune from the top down, the opposite of the harvest: Pezoulia first, because spring comes latest up there. This year there were ten centimetres of snow between the rows and the secateurs stuck to our hands.

We leave two buds on every cane. Fewer buds mean fewer bunches, and more concentrated ones. The canes we cut are not thrown away: they become bundles for the winery fireplace.
